A Vegetarian WIAW

Happy Wednesday!

I thought I’d share my eats from yesterday for today’s What I Ate Wednesday. I usually don’t make any effort to eat vegan or vegetarian, but sometimes I realize at the end of the day that it’s happened inadvertently. Yesterday was one of those days. :) I love when this happens because I used to be so reliant on meat that I couldn’t imagine a day without it.

Breakfast

Breakfast was my usual batch of overnight oats! I’ve finally gotten my overnight oats down to the perfect consistency, which I’m loving. :) I mix in a bit dollop of sunflower seed butter when I get to work too. Yum!

Lunch

Lunch was a boring one. Our building cafeteria usually has a lot of great healthy choices, but not much yesterday, so I went with one of my usual combinations when I can’t find much: spinach, tofu, dried cranberries, and sunflower seeds. I also threw some roasted sweet potato slices on the side, but they had way too much cinnamon for me so I didn’t finish them.

Snack

I got hungry pretty quickly after lunch. I grabbed a honey Chobani from our caf and threw on some of Wild Harvest’s organic cherry vanilla granola and strawberries. So good!

Dinner

For dinner, I went for my one of my recent favorites. Spinach with a portabello veggie burger, roasted red pepper hummus, and goat cheese.

Yes, it looks kind of nasty when all mixed up, but trust me when I say it’s delicious! Super quick too. :D

WIAW: Sensible Snacking in June

Happy Hump Day!

A new goal I’m adding to my June goal list is to participate in WIAW every week this month. :) I’m hoping it’ll keep me much more accountable for my eats, especially switching it up because I am absolutely a creature of habit. This month’s theme is sensible snacking!

8:30 am: Breakfast

Breakfast was my usual overnight oats. I’m not too adventurous with my breakfasts, sadly. Occasionally, I’ll try something different and like it, but the oats are just so easy to make and so delicious! Ah well. I do change it up on the weekends though. :)

I enjoyed them with a big blob of Peanut Butter & Co’s Mighty Maple. I finished off the jar today so I get to have overnight oats in a jar for breakfast and start my new jar of sunbutter tomorrow!

11 am: Snack

I brought some pineapple chunks to work today! They’re so delicious. It’s like eating candy, which I don’t mind one bit. :D

1:30 pm: Lunch

For lunch today, I had another awesome salad from my building’s cafeteria. I’ve been loving their healthier choices lately! They’ve had a lot of beans, quinoa, barley, and other grains, which I love throwing on top of my salad.

Today I went for spinach and romaine with some tofu, roasted sweet potatoes, grilled chicken, mediterranean-style orzo, and spicy feta. Yum! I also had a few more pineapple chunks for dessert.

2 pm: Tea and snack

I decided to try some of my friend Angela’s loose tea around lunchtime. She got it in Switzerland! Neither of us could read the package, so I have no idea what was in it, but it was good! Really fruity, but also a bit tart. Perfect with some agave. :)

I also finished off my pineapple chunks a little later, around 5 pm or so.

8 pm: Dinner

I just bought a new package of Al Fresco Buffalo Style Chicken Sausage, which I haven’t tried yet. I was so excited to today! I was in the mood for something lemony and had half a bunch of broccoli left over from the other night, so I threw this together.

I started out cooking my penne in a pot on the stove, while also chopping up half a chicken sausage and microwaving it. When the pasta was almost done, I threw in my broccoli and let it boil with the pasta. Then I just drained it all and threw it into a bowl along with the chicken sausage, a little bit of olive oil and lemon juice, and some grated parmesan cheese. So good and easy! I’ll be making this one again.

So overall, a pretty good eating day! Though my snacking wasn’t so sensible… I should work on that. Have a nice night!

May Cats and Dogs

The downpour that I awoke to could only be described as “cats and dogs” rain. It was insane!

And despite the pounding on my windows, I somehow still managed to forget my umbrella on my way to the gym. Whoops! I didn’t feel like going back up to grab it, so I opted to walk to the gym without it. The walk from my building’s front door to my gym is literally less than a minute… yet I arrived completely soaked! So much so that the guy at the front desk asked me, “Did you jump in a pool on the way over?” Ha!

Anyway, I definitely remembered to grab my umbrella on my way out for work! When I got there, I gobbled down these overnight oats:I’ve been loving this combo lately! It was 1/4 cup of oatmeal, two big spoonfuls of plain Greek yogurt, about 1/3 cup of vanilla almond milk, chia seeds, chopped dates, raisins, and a big blob of sunbutter added in the morning. Perfection!

After work, I went to the dentist. Before I got in the chair to have my teeth cleaned, they gave me a paraffin hand treatment! I dipped my hands in warm wax and then they wrapped them in plastic and put them in mittens. It felt amazing! My hands were silky smooth when they took off the wax at the end. :) Loved it!

By the time I got home, it was almost 8 and I was starving! I threw together this dinner, one of my favorite quickies.

Scrambled eggs, spinach, tomato and basil pasta sauce, and feta cheese on a whole wheat wrap. It hit the spot! Sometimes when I’m feeling extra lazy, I make it even quicker by cooking the egg in the microwave. :) Dinner’s ready in literally two minutes!

Anyway, thought I’d finish out this post by sharing a few more eats I shared with my dad and sister over the food-filled weekend.

On Sunday afternoon, my dad steamed some Chinese buns: two vegetable and five plain. My favorite way to eat the plain ones is cutting them in half and making sort of a makeshift sandwich with this salty tofu and beef mixture my mom makes. But sadly, we were out so I improvised with chili!

And on Sunday evening, my dad set his mind to making a big dinner. He absolutely loves proving to us that he can cook when my mom isn’t around!

On the table from bottom right to far left: forbidden rice (also known as black rice or purple rice) in our bowls, chicken wings (for my sister), tofu with peas and ground beef, cauliflower stir-fried with peppers and pork, lotus root, and scrambled eggs. Not bad, Dad!

Almost Hump Day!

Biological Clock

Since Monday this week, I’ve been waking up at 6:20 on the dot every morning for no apparent reason. I usually don’t wake up until 7:15 when my alarm goes off. Some Googling told me this was the fault of my bio clock… if so, that little guy and I are not friends right now.

I’m gonna need some ideas for getting Mr. Bio Clock back to normal because I cannot be getting up this early on the weekend too! Time for some serious Googling. And if it doesn’t work, maybe I’ll start trying to take advantage on the weekdays and hitting the gym early. :)

Anyway, breakfast this morning was another winning batch of chocolatey overnight oats. I think this may be on its way to becoming my new favorite breakfast! It got me off to a good start despite my waking up at an unnecessarily early hour. The huge dollop of sunflower seed butter was perfect! :)
