Rainy Sunday

April 22, 2012 at 10:37 am

Happy Sunday!

I woke up this morning with some tension between my neck and shoulder. :( I often get pain there, which I think is caused by stress. So I decided early this morning that an intense gym session would probably not be happening today… Maybe I’ll hit the gym for some cardio later today though.

The forecast’s been on and off rain all today through Tuesday, but when I woke up, it was overcast out but not raining. I decided to take the opportunity to get my grocery shopping done, because it’s just not going to happen after work on a rainy day. Before I left, I had a chocolate banana date ball. Yum!

When I got back from ShopRite, I was starving! As previously mentioned, I keep a jar of my favorite sunflower seed butter in my desk drawer at work. I always miss it at home on the weekends though, so I’d picked some up in the health food aisle. I wanted to use it in my breakfast so I toasted an English muffin and slathered it with sunflower seed butter and some strawberry jam for a sort of open-faced PB & J. :) I love the sort of marbled effect the jam makes on the sunflower seed butter! And I had some blackberries on the side.

Now it’s raining out but I’m still determined to be productive for the rest of the day. Time for me to get started on my laundry!

Thank God It’s Friday

April 13, 2012 at 5:30 am

I find myself thinking, “Thank God it’s Friday” almost every Friday… but I’ve been especially looking forward to this Friday all week. Why, you ask? Because my family has tickets to a Knicks game tonight! :)

Okay, so we’re going together as a family, but not sitting together. My parents are sitting with two of our family friends and my sister and I are sitting in together in a different section. I love any quality sister time though, so that’s fine with me! Baby sis might be sleeping over after the game too, yayyyy.

Breakfast

Now that it’s getting warmer out, I’ve been meaning to start making and bringing my overnight oats again. Sadly, I forgot again last night, so I grabbed an apple cinnamon Chobani on my way out today. I have a bag of Ambrosial Granola’s muesli in my desk, so I stirred some in and let it sit on my desk for about twenty minutes before I couldn’t resist any longer. Another favorite occupant of my desk? Sunbutter!

It’s my new favorite nut butter! I love the drippyness and the taste. It goes perfectly with my morning overnight oats. :)

Lunch

A busy day always means that I’ll be hitting our cafeteria’s salad bar for lunch. Today’s concoction was beets, tofu, roasted butternut squash, chickpeas, and dried cranberries on a bed of mesclun greens. Not bad! I love when the caf offers up something sweet that I can add to my salad, like butternut squash or sweet potatoes.

That’s about it for now! Sooo excited for this Knicks game! :)

Nut Butters and Mocs

March 22, 2012 at 3:07 am

A wonderful surprise was awaiting me when I got home from work today: a 4-pack of Wild Squirrel Nut Butter purchased from Kath’s OpenSky! I’ve been waiting for this one so I couldn’t wait to bust open the package and get at that nut butter.

My current obsession: nut butters!

So far, I’ve only sampled Pretzel Pizazz and Joyful Java, but they are winners! I was seriously impressed by Pretzel Pizazz – how do they keep the pretzels crunchy in there?! Joyful Java was delicious too. The kick of espresso should be the perfect thing to add to my morning oats.

With the addition of this 4-pack, my nut butter collection is now up to 9 jars. What can I say – I like to stock up!

On another note, I’ve been obsessed with my Minnetonka moccasins all winter. They’re perfect to slip on for a cold but dry commute to work. My boss has been making fun of me for basically wearing glorified slippers to work though. But now I can (semi-)justify it!

Harper's Bazaar's loving loafers for spring/fall, and so am I!

I saw this blurb while flipping through the April issue of Harper’s Bazaar after work too. Apparently, loafers are coming back. And moccasins are kind of… fuzzy loafers, right? So it turns out I’ve just been ahead of the curve all along! Or so I’ll just keep telling myself. :)
