A Vegetarian WIAW

Happy Wednesday!

I thought I’d share my eats from yesterday for today’s What I Ate Wednesday. I usually don’t make any effort to eat vegan or vegetarian, but sometimes I realize at the end of the day that it’s happened inadvertently. Yesterday was one of those days. :) I love when this happens because I used to be so reliant on meat that I couldn’t imagine a day without it.

Breakfast

Breakfast was my usual batch of overnight oats! I’ve finally gotten my overnight oats down to the perfect consistency, which I’m loving. :) I mix in a bit dollop of sunflower seed butter when I get to work too. Yum!

Lunch

Lunch was a boring one. Our building cafeteria usually has a lot of great healthy choices, but not much yesterday, so I went with one of my usual combinations when I can’t find much: spinach, tofu, dried cranberries, and sunflower seeds. I also threw some roasted sweet potato slices on the side, but they had way too much cinnamon for me so I didn’t finish them.

Snack

I got hungry pretty quickly after lunch. I grabbed a honey Chobani from our caf and threw on some of Wild Harvest’s organic cherry vanilla granola and strawberries. So good!

Dinner

For dinner, I went for my one of my recent favorites. Spinach with a portabello veggie burger, roasted red pepper hummus, and goat cheese.

Yes, it looks kind of nasty when all mixed up, but trust me when I say it’s delicious! Super quick too. :D

WIAW: Photo Compulsion Edition

Since I started writing this blog, I take photos of almost all of my food. I’m sure many of my fellow food bloggers can relate. ;)

My new photo compulsion has led to a new pet peeve. Like I didn’t have enough already! The latest is having untouched food photos on my phone. I just feel the need to post them on here!

So today’s WIAW isn’t so much a WIAW as a dump of some recent food photos that I haven’t posted. :)

Breakfast

I had these two cereal bowls when I was at Chrysanthe’s house this past weekend. I usually have overnight oats for breakfast every day, which I love, but these were a nice change of pace too!

A pomegranate Chobani with Kashi Go Lean Crunch and raisins. Gotta have my raisins!

A coconut Yoplait Greek with Kashi Go Lean Crunch, raisins, and half of a ginger muffin crumbled on top. I hadn’t tried this yogurt before but I was pleasantly surprised! And it was the perfect portion to go with my cereal.

Lunch

My boss and I went to Touch of Spice in Weehawken for lunch yesterday. On my plate (clockwise from far right) is naan, mutter paneer (green peas and cottage cheese cooked in curry sauce), spinach with potatoes, sauteed veggies, and chicken tikki masala.

I definitely didn’t remember their food being so good the first time. And it was only $7.99 for the lunch buffet! I love a good lunch deal.

For today’s lunch, I put together this salad from my building’s cafeteria. Not too much to pick from, but I was happy with all the green in it! Mesclun greens, green bell peppers, lemon chickpeas, quinoa with tomatoes, feta, and zucchini, and steamed broccoli.

Dinner

Dinner today was a random egg wrap! It’s my go-to quick dinner, but I didn’t have my usual ingredients today so I improvised.

Instead of spinach, I used some rinsed kale and instead of Mexican four cheese, I used goat cheese. I also tried a new salsa today: Desert Pepper’s peach mango salsa. To be honest, I kind of thought this could turn out disastrously as I was putting it together, but it ended up being delicious! The tang of the goat cheese, sweetness of the salsa, and bitterness of the kale all worked together perfectly. I was happy. :)

Off to watch some Cougar Town and hopefully get to bed early!

A Crappy Workout & WIAW

Crappy workout, indeed. :(

I’ve been stressed at work and having trouble sleeping and I think it’s starting to affect my waking hours. Today I ran about a mile on the treadmill and then planned to follow it up with some circuit training. That’s usually not a problem or even a big challenge for me. I just wasn’t feeling it though and ended up cutting my workout short and leaving after about half an hour. Boo.

Anyway, another WIAW today!

Breakfast

Breakfast was a batch of chocolatey overnight oats! I had a feeling I’d be craving something chocolatey and I was right. :) I used my usual overnight oats recipe (1/3 cup of oats, 1/3 cup of almond milk, 3 ounces of Greek yogurt, and a tablespoon of chia seeds) and also added unsweetened cocoa powder and raw cocoa nibs the night before. Before running out the door this morning, I sprinkled some more cocoa nibs on top and some shredded coconut. Delicious!

Lunch

Around lunchtime, my boss was craving a sandwich with sundried tomatoes and mutz from Vito’s Deli in Hoboken so I was happy to tag along and get my own! I asked for turkey, mutz, and sundried tomatoes on a multigrain sub. I ate half of it way too quickly when I got back to my desk, so this sad photo of my lopsided remaining half was all I could get when I got home after work. It tasted much better than it looks!

Dinner

I was in such a weird eating mood today! When I got back from the gym, I wandered around the kitchen for about half an hour wondering what I should make. Finally, I decided on something easy but always good: an egg sandwich on an English muffin with jam and a slice of muenster cheese. I also had some blackberries on the side.

Looking back, I definitely did not get enough vegetables or fruit today! Boo. Bad eating day and bad gym day. :( I’ll try for a better one tomorrow!

A Post-Tax WIAW

Taxes, done! :) Even if it meant staying up until 12:30 last night and being out of it all day today.

And time for a WIAW!

Breakfast

I totally forgot to make my overnight oats due to my pre-occupation with my taxes! Instead, I ended up getting a parfait with banana yogurt, cottage cheese, granola, and raisins from my building’s cafeteria. No picture, sorry!

Lunch

I got crazy busy today and ended up eating lunch far too late, around 1:30 or so. And by the time I got to the salad bar, the mesclun greens and spinach left were all kind of yucky and wilted, so I went for the romaine. I topped it with some penne pasta, zucchini and squash, beets, cherry tomatoes, roasted corn, and dried cranberries. Yum! It provided some much needed fuel for the day.

Dinner

Dinner was a bowl of lemon penne topped with steamed broccoli and a piece of leftover tilapia from last night. I went back for some more lemon juice after the first taste and ended up drowning in acidity. Whoops. Still pretty satisfying though.

That’s all for me tonight! Now I’m off to make tomorrow’s overnight oats. :)
