I think I may already know what you’re thinking: “What a weird title and what a random picture of two socks down there!” I just had to share this story though.
While getting ready for the gym this morning, I pulled two socks out of my dresser. My sister and I have had the same brand of socks for years and they’re always getting mixed up, which is kind of a problem since I’m a size 6.5 and she’s a size 8. I found this mismatched pair was hilariously apparent. I miss my sissy!
Anyway, moving on. I had an absolutely delicious dinner today, which turned out to be really similar to Gina’s quinoa and roasted grape salad! But her photos are much prettier than mine.
I actually got the idea for this dinner from Jessica’s roasted strawberry farro. But I didn’t have strawberries, farro, or asparagus, so I used grapes, quinoa, and spinach instead. I also threw in some roasted chopped walnuts for crunch.
Overall, it was tasty! But I did go a little heavier on the goat cheese, which might’ve been a poor decision for my waistline. Next time, I’ll definitely use less and also roast the grapes for longer. I wanted more of that sweet grape juice, but none of the grapes really got to the exploding stage because I was starving and in a rush to eat.
